Recipe/DIY: Rainbow Eggs
It can be so hard to get kids to eat their protein. My twins are especially picky when it comes to eggs, but since they are so packed with good stuff I want to start their day off right. I figured out a way to get them to eat their eggs AND love them – Rainbow Eggs! It’s super easy:
Separate eggs into however many colors you want to make. I usually do 4 colors and use 4 eggs = 1 egg per color. If you do less just whisk your eggs and separate them after.
Start with the lightest color and add one drop of food coloring. Scramble those and set aside onto a plate. Go with the next lightest, scramble, set aside, and so on until all of the eggs are scrambled. You do NOT need to clean the pan between each color.
I like to make them into stripes – like a rainbow!
